Ingredients
- 1 oz (25 g) butter
- 2 large potatoes, peeled and roughly chopped
- 1 large onion, chopped
- 1 3/4 pints (1 litre) chicken stock
- 1 small clove garlic, finely chopped
- Salt and black pepper
- 1 tbsp curry powder
- 2 oz (60 ml) whipping cream
- 1 small banana, peeled and roughly chopped
- 1 good bunch fresh coriander, chopped
Instructions
- Place the butter in a large saucepan over a medium heat.
- Add the onion and garlic and cook in the butter for about 5 minutes until soft.
- Sprinkle in the curry powder and cook for 1 minute.
- Add the banana and potatoes, stir, and then pour in the stock.
- Bring to a boil and simmer for approximately 30 minutes.
- Remove from the heat and allow to cool.
- Blend to a smooth texture with a hand-held blender.
- Gently reheat, but do not boil.
- Check for seasoning, adding salt and pepper to taste.
- Serve with a swirl of cream and a heaping tablespoon of fresh coriander in each bowl.
