Chicken Nuggets with Blackberry Sauce

Ingredients
  • 1 cup fresh blackberries or raspberries
  • 1.5 T. whole-grain mustard
  • 2 T. honey
  • 1 lb chicken tenders
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 T. cornmeal
  • 1 T. extra virgin olive oil
Instructions
  1. Mash berries, mustard and honey in a small bowl til it looks like a chunky sauce.
  2. Sprinkle chicken tenders with salt and pepper. Toss in cornmeal.
  3. Heat oil in large skillet over med-high heat. Reduce to medium and cook chicken, turning once or twice, until browned and just cooked through about 6 – 8 min.
  4. Serve nuggets with the dipping sauce.
