| Chicken Nuggets with Blackberry Sauce |

- 1 cup fresh blackberries or raspberries
- 1.5 T. whole-grain mustard
- 2 T. honey
- 1 lb chicken tenders
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 T. cornmeal
- 1 T. extra virgin olive oil
Instructions
- Mash berries, mustard and honey in a small bowl til it looks like a chunky sauce.
- Sprinkle chicken tenders with salt and pepper. Toss in cornmeal.
- Heat oil in large skillet over med-high heat. Reduce to medium and cook chicken, turning once or twice, until browned and just cooked through about 6 – 8 min.
- Serve nuggets with the dipping sauce.
